Grilled Peach, Watermelon & Feta Salad

Fruit is an amazing way to pimp up a salad and offer something slightly different. We seem to be really blinkered in the UK when it comes for fruit on savoury dishes and especially when it comes to salad.

This recipe has some really exciting flavours, textures and temperatures! I recommend serving the watermelon and cherry tomatoes fridge cold with the warm grilled or BBQ’d peaches. The feta adds a wonderful creamy saltiness as it always does and means we don’t have to add any further salt. It leaves an amazing balance of sweet, sour, smokey and salty flavours! It’s another recipe that gives you so much return for how simple it is!

This is definitely one to try at your next BBQ! It will blow your guest’s socks off!

INGREDIENTS:

4 Peaches

300g Watermelon

10 Cherry Tomatoes

150g Feta Cheese

4 Tbsp Extra Virgin Olive Oil

METHOD:

  1. Halve the peaches and remove the stones

  2. Heat a griddle pan, or better yet fire up the BBQ, on high

  3. Place the peach halves flesh side down onto the griddle/BBQ and cook for 4-5 minutes until charred and starting to soften. You don’t want the peaches to completely break down, you want them to retain some texture

  4. Turn the peaches over and lightly char on the skin side

  5. Remove from the heat and set aside to cool

  6. Dice the watermelon into decent sized chunks, halve the cherry tomatoes and add to a bowl

  7. While still warm, slice the peach halves, I slice each half in half and go with peach quarters but this is entirely up to you, and add them to the bowl

  8. Dress and coat the salad well with Extra Virgin Olive Oil

  9. Serve in a salad bowl and crumble over the feta cheese
